I love fish and the recipe below has become one of my favourites. It is very easy to prepare and keeps well in the freezer.
- salmon
- butternut squash
- fresh spinach
- honey
- pepper
- salt
- rosemary
- garlic (optional)
- hazelnuts
Take the skin of the butternut and cut into bite-size pieces. Cook until tender. Rinse and set aside. Cut the salmon into pieces similar to those of the butternut. Fry until golden from the outside and done (to your liking) on the inside.
Add butter to a larger sauce pan, add all the spices + the honey and stir until all is well mixed. Add the butternut, salmon and hazelnuts and mix. Add the spinach and toss around once more. Serve while still hot.
The recipe is very flexible when it comes to the amount of butternut, salmon etc. one uses. Whatever rocks your boat really. So try it out and let me know.
