Those not only LOOK better, they also TASTE amazing. I changed the recipe around a little.
- 300g almond flour
- pinch of salt
- teaspoon of baking soda
- a good measure of ground cinnamon
- 60g coconut butter
- 40g honey
Mix all dry ingredients in a larger bowl, plus all the liquid ones in a smaller one. THEN throw everything together and mix. As I was still aiming for the Christmas theme with my biscuits, I put the dough – inside a small plastic bag – into the fridge. However, the dough gets really sticky and unmanageable when it gets too warm (solution: either make less dough, take the baking in turns or invite loads of people that do the rolling and cutting for you).
As my gas oven is of the prehistoric variety, I had trouble getting the temperature right. Batch number one was burned to black charcoal within minutes. Second baking tray was a little better, but still tanned to ‘uneatable’.
Number three was perfect however. Sitting next to the oven and watching the biscuits however, was not as exciting as I remember.
Now I am enjoying a nice cup-o-tea, some cinnamon biscuits and I even rummaged through the book shelf for one of my all-time favourites. Guess who will have a wonderful afternoon.
