As I mentioned in a few blog posts, I have been experimenting with almond flour and bread making. I am not entirely sure if I was successful in my endeavours, but I’ll let you in on a secret.
Mom’s cakes are miles better.
- 300g almond flour (the finest variety you can find)
- 100g walnuts (chopped into smaller pieces)
- 1 teaspoon baking soda
- 1 carrot (grated)
- 2 eggs
- 30g melted butter
- seasoning (anything you feel like that takes the almond taste off a bit)
As usual mix all the dry ingredients (that included the carrot though) and then mix up all the liquid ingredients up into a fluffy mix.
Then mix everything together. I haven’t quite figured out how much carrot I would need to make it less like a ‘too dry’ cake and more like a nice bread.
However, as you can see in the picture above, I tried it with cheese. It actually turned out rather okay.
