I am no vegetarian. And with a starch-free lifestyle, it is almost impossible to be one. Besides; meatballs, who could possibly live without them? I can’t, that’s for sure. And they actually taste rather nice with almond flour. Trust me on that one.
- minced meat (I prefer ground beef, but any will do really)
- eggs
- almond flour
- pepper & salt
Mix everything and form small-ish, round-ish objects (I haven’t mastered the art of making meatballs, but small-ish, roundish objects I’m an expert in). Turn them – in a frying pan with a small amount of butter – into golden delights.
That would be the easiest way of making them. They will also have the most boring taste to them. If I combine those with the potato soup (from a few posts ago), then I leave them like that.
For the friends of lively experiments
For those of you that have a stash of herbs and spices in the kitchen cupboard … below are a few suggestions that worked well for me in the past. I like all of them. Pepper and salt still need to go in though.
- garlic, rosemary and chives
- paprika and tomato paste
- parmesan, garlic and rosemary
- tarragon, rosemary and nutmeg
- garlic, hazelnuts, rosemary
- pine kernels and tarragon
- cumin and paprika
