ain’t no boring omelette

There is no such thing as a boring omelette. Bland, uninspired, crumbled, … but never boring. Not to say that I haven’t had the exact same thoughts. On the contrary. But if you had to eat omelette for 2 months straight, you start experimenting with the whole concept.

  • raw mushrooms
  • olive oil
  • eggs
  • milk
  • spring onions
  • tomatoes
  • salt, pepper, chives & parsley

Start with cleaning and slicing the mushrooms thinly. Fry them and set aside. Continue with chopping both spring onions and chives. Take small tomatoes and slice them too.

Mix the eggs with a little bit of milk. Add the salt and pepper and use a wire whip to mix everything. Add to a frying pan and let set for a few seconds. Turn down heat. Add the mushrooms, tomatoes, spring onions and chives.

Cover everything with a lid and wait. Shouldn’t take too long.

I used to make omelette for breakfast, but this one works really well for dinner actually.
