chia seeds, almond milk and quark heaven

I admit. When it comes to breakfast, I’ve always been rather lazy. But the ‘coffee-on-the-run’ and the ‘banana-to-go’ doesn’t really work anymore. So … what to do, what to do.

I discovered chia seeds. And they work great for me. The good thing, I am still having a breakfast, which is flying with me so to speak.

  • 2 tablespoons of chia seeds
  • 200 ml of almond milk (or thereabouts)
  • fruits
  • quark (for the English speakers: similar to curd, but not quite)

Add the chia seeds and the almond milk to a container (i use smaller Mason jars, as they are reusable and cool looking). Besides, you feel a lot more trend-y when you can say “I use Mason jars” (although any container will do).

Let sit for at least 2 hours in the fridge. I tend to do this after I come home from work and stir – the now somewhat solid – mass before going to bed.

In the morning, add the quark (Greek yoghurt will do fine too) and the fruit and enjoy a healthy breakfast. I flonk the lid back on and take the whole lot to work.

If you have a bit of a sweet tooth, add sugar or honey.
