Although temperatures have dropped to healthy 10-15 degrees here in Sweden, I am not one to give up hope. I am going to post another summer salad. (will work in autumn too. and in winter. and possibly in spring.)
- cucumber
- salt
- pepper
- vinegar
- sugar
Prepare the cucumber and slice thinly into a bowl. Add a generous (not too generous mind) amount of salt and mix. This will help remove some of the water. I usually let it sit for 30-45 minutes. Drain the water and squeeze out any additional water from the cucumber. I tend to save some of the ‘water’ in a smaller cup; and remove as much water as i possibly can.
Season with pepper, a liiiittle sugar and vinegar. Mix and flonk into the fridge. The salad will keep for a couple of days in a closed jar.
As I said above, I like to retain a bit of the ‘water’. This is what I mix the pepper, sugar and vinegar with. The advantage being that you can add as much as you like to the cucumber. Additionally, you can also experiment with garlic.
Note: Do not – under any circumstances – add more salt to the salad. It will ruin it. Trust me on that.
