stuffed pumpkin for movie night

Cold, cold November … full of comfort food. I love it. Sitting on the couch, blanket, tea, watching a movie* while eating something warm and comfy. I can’t think of anything better (at least not at the moment).

At the local food store, the pumpkin was staring at me; calling out to me. I am weak. I could not resist. I also bought:

  • IMG_3465kale
  • chili
  • garlic
  • minced meat
  • cheddar
  • gorgonzola
  • seasoning

Prepare the pumpkin (cut in half, remove the seeds and increase the ‘hole’) and start baking at 175°C for 30 minutes. In the meantime, prepare the mince meat and fry in a bit of coconut oil, with the garlic and the chili. Add pepper and salt. (I also added the stuff that I scooped out of the pumpkin (except for the icky seed part) so it wouldn’t go to waste.).

Keep and eye on the pumpkin halves and test. They should be soft when you test with a fork. If that is the case, add the kale and the gorgonzola to the filling. Stuff the pumpkin halves and cover with a generous amount of the cheddar.

Return to the oven and bake for 10 more minutes.
