Remember the bread from a few weeks back? Yeah? Great. Here is a new version of it. Personally I believe it is even better than the last. (And a whole bunch of my guinea pigs thought so too.)
I amended the recipe slightly, left out the dried fruit and added cocoa bites instead. Turns out rather well.
120g sunflower seeds- 200g hemp seeds
- 100g flax seeds (coarsely ground)
- 100g nuts (I used hazelnuts)
- 200g almond flour
- 50g cocoa bites (I buy those in a fitness and health shop here in Stockholm)
- chia seeds
- poppy seeds
- sea salt
- 5 Tbsp. psyllium husk powder
- 1 Tbsp. Maple syrup
- 5 Tbsp. melted coconut fat / oil
- water*
Mix all dry and all wet ingredients separately, before mixing them together. You may have noticed that I did not add a specific amount of water above. The reason being … I don’t really know. I tested the above recipe with 450ml of water. Here it worked rather well.
I still went with at least 1 resting day (hidden away in the oven). Then baking it for 20 minutes in the form; then 45 minutes without. 180°C has also remained the same.
