A nice casserole/ bake for those that need to add more iron into their food intake. Mix
- beetroot (cooked)
- feta
- mushrooms
- walnuts
- honey
- herbs and spices
Clean everything and cut into bite-size pieces. I tend to slice 50% of the beetroot, the rest is cut into cubes.
Mix everything and season. Now start to fill a baking tray (form). With sliced beetroot, you can actually go for a lasagne style. Finish with a topping of cheese. Add a little bit of cream if you wish.
Bake at 170°C for 30 minutes. Enjoy.
