One easy way to cook during a skiing holiday is … casserole or bake. Here is a recipe that was easy to make and delicious to eat.
- salmon
- zucchini
- brussel sprouts
- broccoli
- topinambour or sunroot
- cheese
- cream
- seasoning (fresh dill and chives, pepper and salt)
Cut salmon and vegetables in medium-sized pieces and fill a casserole. (I usually parboil the vegetables a bit beforehand.)
Grate the cheese. (Here I used a Swedish hard cheese.)
Mix cream, pepper, salt and the fresh (cut) dill and chives. Boil for a minute or two and take off the heat. Add half of the cheese and mix.
Pour the cream mixture into the casserole. Bake in the oven for some 10 minutes at 150° celsius. Add the remaining cheese and change to a higher temperature (or grill). Continue until the cheese top is a pleasing golden-brownish colour.
Change vegetables around to suit your tastes (or what is left in you fridge or pantry). The possibilities are endless.
