the beauty of snow and ice

I am alive. Not much worse for wear either.

To be more precise, I just returned from a skiing holiday trip. Week 3 is always girl’s week. And despite my lack of any skills when it comes to skiing, that favourite sister of mine (yes, I know … I only have one sister) always wheedles me into a cross country skiing trip. What can possibly go wrong?

I look like a smurf.

Nevertheless; I managed to keep up my food intake to as low in starch as possible. One of the days we made lasagne. So here it goes:

  • minced meat
  • 1 onion; finely chopped
  • a few mushrooms
  • garlic (if you like)
  • seasoning (salt, pepper, thyme, oregano, rosemary)
  • fresh basil
  • tomatos
  • mozzarella cheese
  • parmesan (grated)
  • zucchinis

Use all the above ingredients (except cheese and zucchini) and blend into a nice bolognese sauce. Make it rather thick. Slice the washed zucchini into thin slices (lengthwise).

Now the fun begins; we pile food: sauce, zucchini, sauce, mozzarella, repeat. Top everything with the parmesan. This goes into the oven for some 40 minutes. It might be bl***y hot, but it is oh so good.
