will there be pizza tonight? of course, what else!!!

Now, we all know that pizza is made of crust and toppings. While the toppings may or may not cause problems when eating starch-free … the crust most certainly will.

There are a lot of recipes out there for look-a-like pizzas and last weekend, I decided to try variations of one particular recipe.

  • 2 cups of grated cauliflower
  • 2 cups of grated cheese
  • 2 eggs

This basic – crust – recipe is good and works well. However, I did not really appreciate the mozzarella version that I did. Too gooey for my liking. I preferred a stronger hard cheese that brought a little taste to the whole thing. I also reduced the number of eggs to just one. Something to test out, I guess.

Mix everything together and add herbs and spices to the mix if you like (I did not). Line a small round baking tin with paper and distribute the mixture evenly (thin) and flonk everything into the oven; 150°C for about 10 minutes. Watch and take it out when the edges start to get brown.

Meanwhile, wash, chop and prepare all the toppings that you would like to use and start piling: Tomato sauce and all the rest. (I tested with mushrooms, chives, cheese and zucchini). Place it back into the oven for another 10 minutes, but keep a very close eye on it. The first one I did went up in flames and burned to ashes.
