Following a bunch of Pinterest post about egg muffins, I decided to give them a chance. So far I did not have much luck with those. Unfortunately. The pictures look delicious.
Leaving eggs aside for a while, I went with mince meat instead. They turn out as fantastic as they look.
- mince meat (I took beef)
- egg
- cilantro
- walnuts
- garlic
- pepper and salt
- red bell peppers (as shown in the picture), or broccoli, etc.
- onions
- little paper muffin forms
- metal muffin baking tray
Chop everything (onions, peppers, walnuts) as finely as you can. Chop the cilantro too. Mix everything (really everything this time) and fill the muffin forms. Bake in the oven on low to medium heat for about 15 – 20 minutes. Enjoy as they come (with a little bit of mustard) or with a fried cauliflower rice dish.
