Remember the chicken I’ve talked about before Christmas? Yeah? Me too. … That is also the reason why I decided that chicken legs are also good for summer. And trust me, they are. But you will need patience.
- defrosted chicken (legs; thighs, whatever you want to call it)
- butter
- garlic, pepper, salt and other spices
Preheat the oven to max. Clean the chicken and use salt and pepper generously. Add butter to a casserole (however, I prefer to use a high-rimmed baking tray) and place the thighs (onto the skin). Into the oven for 5 minutes on max. Add water and all the spices and herbs and reduce the heat to 150°C.
This part now should take 40 – 45 minutes. Check occasionally and drip water over the thighs. Add more water if necessary.
The chicken is ready when you ‘could’ remove the bones easily. And I mean easily.
Enjoy on its own, with BBQ sauce, dips or anything else you can possibly think of.
