cauliflower and cheese

Ever had the American staple Macaroni & Cheese? Here is a take on it that is starch free.

  • Cauliflower
  • 1 Egg
  • Butter
  • Milk
  • Herbs and Spices
  • Cheese
  • Pepper & Salt

Clean and cook the cauliflower and set aside. Grate the cheese and set aside.

In a small bowl, beat the egg and set aside. In a larger pot (than can hold the sauce as well as the cauliflower), melt the butter, add the milk, add the cream and stir constantly.

Use a bit of the milk and add to the egg mixture (be sure that the milk is not too hot, otherwise you will have scrambled eggs) and stir. Then pour the egg mixture back into the sauce. Stir constantly on lower heat until everything is smooth. Add the cheese and melt. Add pepper and salt, while stiring constantly. Add aadditional spices and herbs as desired.

Pour everything into a buttered baking tray, top with extra cheese and bake until bubbly and golden on top. Takes about 20 to 25 minutes.

Tip: I tend to ‘under-salt’ the sauce, so make sure to taste it before pouring everything into the baking tray.
