stuffed zucchini

zucchiniSome while ago, I was invited to a friend’s house for dinner. And lovely (starch free as it were) food was served too. One of the dishes that caught my fancy was Stuffed Zucchini.

  • zucchini
  • minced meat
  • egg
  • cream fraiche
  • chilis (optional)
  • pepper & salt
  • spices and herbs

Pre-heat the oven to 180°C-

Clean the zucchini, cut into smaller pieces and clean out the inside. (I, personally, don’t like the lengthwise cut pieces as the stuffing tends to fall out.)

In a separate bowl, mix minced meat, egg, cream (or cream fraiche) and the spices.

Fill the zucchini and top with chilis (optional). Place in the oven and bake for 15 to 20 minutes. Test with a wooden screwer. Enjoy.
